Crispy Sliced Roasted Potatoes with Creamy Spicy Dipping Sauce
Ingredients
For the roasted potatoes:
4 medium potatoes (6–8 ounces each), either russet or Yukon Gold variety
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon paprika
¼ teaspoon fine sea salt
¼ teaspoon freshly ground black pepper
¼ cup unsalted butter, melted
Dipping Sauce
½ cup full-fat mayonnaise
¼ cup full-fat sour cream
2 tablespoons ketchup
1 tablespoon prepared horseradish
1 tablespoon white vinegar
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon paprika
½ teaspoon fine sea salt
½ teaspoon freshly ground black pepper
Step-by-Step Directions
Start by prepping your potatoes: Scrub each potato thoroughly under cool running water to remove all dirt and debris from the skin.
Set one potato on a cutting board and use a sharp knife to slice it crosswise into 1/8-inch thick cuts. Stop cutting when you are ½ inch away from the bottom of the potato, so all slices stay connected at the base. Rotate the potato 90 degrees, then repeat the same 1/8-inch slicing lengthwise, again taking care not to cut all the way through the base. Repeat this process for all remaining potatoes.
Transfer all sliced potatoes to a 2-quart square baking dish. Cover the dish with loosely vented plastic wrap, then microwave on full power for 5 minutes to pre-soften the potato centers.
In a small bowl, stir together garlic powder, onion powder, paprika, salt, and pepper to make a uniform seasoning blend. Brush melted butter all over each potato (work the butter into every gap between slices) then sprinkle the seasoning blend evenly over all potatoes.
Preheat your oven to 425 degrees F (220 degrees C). Line a rimmed baking pan with aluminum foil for easy cleanup, then arrange the seasoned potatoes on the prepared pan. Bake for 15 to 20 minutes, until the potato edges turn deep golden brown and the exterior crisps up.
While the potatoes roast, make the dipping sauce: Add all sauce ingredients to a medium bowl and stir until everything is fully combined and the sauce is completely smooth.
Pull the potatoes out of the oven once done, and serve immediately while hot, with the dipping sauce served on the side.
