Creamy Avocado Feta Salsa

Ingredients
1 avocado, peeled, pitted, and diced
⅔ cup crumbled feta cheese, preferably sheep’s milk feta
2 Roma tomatoes, diced
⅓ cup diced red onion
2 tablespoons chopped fresh cilantro
Juice from ½ a fresh lime
2 tablespoons minced jalapeño (optional, for extra heat)
1 tablespoon extra-virgin olive oil
1 clove garlic, minced
1 teaspoon red wine vinegar
Salt and freshly ground black pepper, to taste
Instructions
Add all prepped ingredients (avocado, feta, tomatoes, red onion, cilantro, lime juice, jalapeño, olive oil, garlic, and red wine vinegar) to a medium mixing bowl. Gently toss everything just until evenly combined — take care not to overmix, which will mash the soft avocado and ruin the chunk texture.
Taste the mixture, then season with salt and pepper to suit your preference. If you are not serving immediately, store the finished dip in an airtight container in the refrigerator.

Pick avocados that are slightly firm to the touch for this recipe. They will hold their shape well when mixed with other ingredients, rather than breaking down into a mushy consistency.
