Spicy Fried Egg Salad Avocado Sandwiches
Ingredients
2 tablespoons of creamy mayonnaise
2 teaspoons of Sriracha hot sauce
1/2 cup of shredded pepper Jack cheese
1 small green onion, finely chopped
6 large hard-boiled eggs, peeled and roughly chopped
Salt and freshly ground black pepper, to taste
Non-stick cooking spray
4 hamburger buns
1 small ripe avocado, thinly sliced
Step-by-Step Instructions
In a medium mixing bowl, combine mayonnaise, Sriracha, shredded pepper Jack cheese, and chopped green onion. Whisk all ingredients together until they are evenly blended. Gently fold in the chopped hard-boiled eggs, taking care not to over-mash the egg pieces. Season the full mixture with salt and pepper, adjusting to your taste preference.
Place a large nonstick skillet on the stovetop and preheat it over medium-high heat. Once the skillet is warm, lightly coat its surface with non-stick cooking spray.
Scoop one quarter of the prepared egg mixture into the heated skillet. Use a spatula to gently press the mixture into a thick, even patty shape. Let it cook undisturbed for 1 minute, then flip the patty and cook for an additional 1 minute on the opposite side. Transfer the finished cooked patty to a clean plate right away, then repeat the shaping and cooking process with the remaining egg mixture to make 4 patties total.
Assemble your sandwiches by placing one cooked egg patty on a hamburger bun (you can also use toasted bread if preferred). Top the patty with fresh sliced avocado, add the top bun, and serve immediately.
